Yield: 4 drinks


1/2 cup VS or VSOP Cognac

1/2 cup simple syrup

2 lemons

2 cups of ice cubes

1 bottle good Champagne, chilled


  1. Zest 4 long strips of lemon rind from your 2 lemons. Cut and juice lemons, yielding roughly 1/3 cup of fresh juice.
  2. Pour the Cognac, simple syrup, and lemon juice into a cocktail shaker and add ice.
  3. Shake for at least 30 seconds (it’s longer than you think!).
  4. Fill 4 Cocktail glasses 2/3 full with your mixture. Top with Champagne, garnish with the lemon zest, and serve ice cold.
