Berry Festive Parfait

Serving Size: 5-6 Parfaits

Ingredients

  • 1 jar la madeleine strawberry rhubarb jam
  • 1 cup heavy whipping cream
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 premade pound cake cut into 1” cubes
  • 1 box instant vanilla pudding mix
  • 2 pints quartered strawberries
  • 1 pint fresh blueberries
  • 1 pint fresh raspberries

Directions

  1. Prepare the vanilla instant pudding according to the box and set aside.
  2. Place a metal mixing bowl and metal whisk into the freezer for 10 to 15 minutes.
  3. Add the sugar, whipping cream and vanilla into the mixing bowl
  4. Whisk just until the cream reaches stiff peaks.
  5. Layer the parfait in the following order:
    1. Cake Cubes
    2. Strawberry Rhubarb Jam
    3. Strawberries
    4. Vanilla Pudding
    5. Blueberries
    6. Cake Cubes
    7. Strawberry Rhubarb Jam
    8. Whipped Cream
    9. Raspberries and Blueberries
  6. Chill for one hour before serving
