Our famous tomato basil soupe is crafted with the finest ingredients, including vine-ripened California tomatoes sourced from a single crop each year to ensure rich color and distinctive taste.

La Madeleine’s famous Tomato Basil Soupe was born of a simple ordering mistake. Ten cases of Roma tomatoes were ordered instead of one, and we needed to make something before they spoiled. And with that our first executive chef, Rémy Schaal, created la Madeleine’s most iconic soupe.

Now, each year, we source a single crop of vine-ripened California tomatoes to ensure a completely consistent product. We slowly simmer the juicy, ripe tomatoes, fresh basil, real cream, and a couple of other secret ingredients to create our simple but utterly addictive soupe.
