For our crave-worthy Ceasar, we use romaine and leaf lettuce, croutons made from our homemade breads, and dressing from a recipe close to our hearts.
“I need a Caesar please.” A request heard at least three times a minute. The dressing is the star of our Caesar, and we owe credit to a la Madeleine associate at our original Mockingbird bakery who was simply responding to a guest’s request for a Caesar salade. She whipped up a recipe that she made for her own family, and we’ve been using it ever since.
To this day we make the dressing in the classic style, true to her original recipe of emulsifying eggs with oil, fresh garlic, red wine vinegar, and seasonings. No starches or gums are used in our dressings, just fresh ingredients. Croutons are baked daily in our bakeries with a mixture of sourdough and country wheat breads, olive oil, and garlic to create that signature crunch.
We mix each salade to order with our dressing, crisp romaine, Parmesan cheese, and freshly baked croutons. Some guests say they are addicted to our Caesar…we are too!
